1 bag Chateau mini potato dumplings
1 small onion chopped very fine (approx. 3/4 cup)
3 TB dill pickle relish or 3-4 pickle spears chopped fine
1/2 C frozen peas
1/2 C carrots diced very small
1/2 to 3/4 cup mayonnaise
1 to 2 Tbsp. dijon mustard
Juice of 1 lemon
salt and pepper to taste
Cook dumplings according to package directions, drain, then let cool under cold running water until no longer warm to touch.*
While dumplings are boiling, place eggs into small saucepan and cover with cold water, bring to a boil. As soon as water comes to a rolling boil turn off heat and cover pan.
Let eggs sit covered for 10 minutes then remove cover and drain. Cool under cold running water until eggs are no longer warm to the touch, about 10 minutes.*
Blanch peas in boiling water or follow package directions for microwave steaming, cool under cold running water.*
Blanch carrots in boiling water or place in small microwave safe dish with enough water to cover carrots and cook until tender but not mushy, 3-5 minutes. Cool under cold running water.*
Place dumplings into a large mixing bowl. Add onion and the dill relish (or chopped pickles) to the mixing bowl.
Add peas and carrots and lemon juice to mixing bowl, season with salt and pepper tp taste (about 1/4 to 1/2 tsp each).
Peel eggs and separate the yolks from the whites. Place the yolks into a smaller mixing bowl and mash with a fork until they resemble coarse crumbs.
Add mayonnaise and mustard and a sprinkle of salt and pepper, mix well and set aside.
Grate the egg whites over the potato mixture and use a large spoon to mix well.
Pour the egg yolk-mayo mixture over the vegetable mixture and incorporate it all together.
Taste and add more salt and pepper if needed.
For best results cover and refrigerate overnight.
*Cooling ingredients rapidly helps prevent the growth of harmful bacteria as well as allowing you to assemble and enjoy your dumpling salad more quickly without having to wait for the entire bowl to cool overnight. Overnight refrigeration is still recommended for best flavor.
