Blackberry & Peach Skillet Dumpling Cobbler from The Kitchen Wife

Ingredients

  • 3 Ripe Peaches, peeled and sliced.  (you can also used canned)
  • 12 oz of Fresh Black Berries
  • 1 24 oz bag of Chateau Mini Potato Dumplings
  • 1 c Water
  • 1/2c Brown Sugar
  • 2 Tbsp Cornstarch
  • 4 Tbsp Unsalted Butter
  • 1 tsp Cinnamon
  • 1 tsp Vanilla Extract
  • Pinch of Salt
  • Sliced Toasted Almonds
  • Whipped Cream or Ice Cream

Steps

Directions:
  • Bring a large pot of water to boil.
  • Peel and slice your peaches.  (Yes, you can use canned peaches)
  • In a large mixing bowl combine the fruit, brown sugar, cornstarch, cinnamon, vanilla, and salt.
  • Stir everything together and sit the bowl to the side.
  • Add the frozen dumplings to the boiling water and cook for 5 minutes.
  • Drain the dumplings.
  • Add 2 Tbsp of unsalted butter and 2 Tbsp of oil to a skillet and allow it to get HOT.
  • Add the cooked dumplings to the skillet and brown them off.
  • Remove the browned dumplings from the skillet and add the remaining butter.
  • When the butter has melted, add the water and fruit mixture.
  • Allow it to GENTLY simmer until the sauce thickens.
  • Once the sauce is thick and glossy, return the dumplings to the skillet.
  • Stir everything together.
  • Scoop into a shallow dish, and top with whipped cream or ice cream.
  • Sprinkle on some chopped nuts.
  • Serve and enjoy!
