Chateau Chicken Paprikash

Ingredients:

1 frying chicken cut up

2 tablespoons Hungarian paprika

1/4 teaspoon salt

2 tablespoons butter

1/2 cup onion, finely chopped

1/4 cup green pepper, finely chopped

1/4 cup celery, finely chopped

1/2 teaspoon parsley

2 cups chicken stock

cayenne pepper

2 tablespoons flour

1 cup sour cream


Directions:

Season chicken with salt and 1 teaspoon paprika. Brown lightly in butter in a large frying pan.

Add chopped vegetables and parsley,cover and cook slowly for 5 minutes or until onion is softened.

Add chicken stock, the remainder of paprika, and a dash of cayenne pepper.

Simmer covered for 30 minutes,or until chicken is tender.

Combine flour with sour cream until smooth.

Pour sour cream/flour mixture over chicken and stir until sauce thickens.

Serve with Chateau Bread Dumplings.
